TASTY TUESDAY: Red Lentil Soup

This is one of the most delicious soups ever! Well, that’s according to Graeme, Lily and I. And it is so quick and easy to make, using just a few simple ingredients. Sounds perfect, right?

Ingredients (Serves 4 – 6): 

2 Cups Red Lentils

1 Onion, chopped

3 Cloves Garlic, peeled and crushed

1 Tsp Ground Cumin

8 Tomatoes

6 Cups Vegetable Stock

Fresh Coriander for Garnishing

Directions:

Firstly, remove the skins from the tomatoes. It’s easiest if your tomatoes are really, really cold (you can even stick them in the freezer for an hour) and then boil or steam them for a few minutes. The skins burst and then they’re easy to pull off. Once removed, chop the tomatoes and set aside.

Next, in a large saucepan, fry the onion and garlic in a dash of olive oil until softened. Add the cumin and fry for another few minutes.

Add the red lentils and toss until coated in oil.

Pour in the stock, add the tomatoes, bring to the boil and then allow to simmer gently for about half an hour.

Blend the soup, season with salt and pepper, serve, and garnish with a sprinkling of coriander. We unfortunately didn’t have any naan bread, but we think it would be a delicious accompaniment :)
